Ingredients
24 TRISCUIT Crackers
1 cup sliced heirloom cherry tomatoes
1 Tbsp. extra virgin olive oil
1/2 cup part-skim ricotta cheese
1/2 cup shredded low-moisture part-skim mozzarella cheese
2 Tbsp. grated Parmesan cheese
6 large fresh basil leaves, thinly sliced
1/8 tsp. freshly ground black pepper
Directions

1. Heat oven to 375°F.

 

2. Place crackers, with sides touching, in 6 rows of 4 crackers each on parchment covered baking sheet. Toss tomatoes with oil.

 

3. Combine cheeses; spoon onto crackers. Top with tomatoes.

 

4. Bake 5 min. or until cheese mixture is melted.

 

5. Top with basil; sprinkle with pepper.

 

Tips- Substitute : If heirloom cherry tomatoes are not available in your market, you can instead use your favorite coarsely chopped tomatoes.
